Fresh Basil Dressing

Anyone with a herb garden knows that hot weather and basil growing go hand in hand. It's one of the many reasons I love summer, abundant herbs in the herb garden. My dad is an amazing gardener and this year the basil crop is almost getting out of hand, but i've managed to tame it with this lovely basil dressing. It's the perfect dressing for a salad or steamed veggies, and a great way to sneak some more greens in to your diet. 

What you need: 

2 cups roughly chopped fresh basil

1/4 cup olive oil 

1 tablespoon or so of water 

1/4 cup vinegar (I used apple cider because that's what I had but any would work fine)

1 teaspoon of honey 

Juice of 1/2 lemon

generous sprinkle of salt and ground pepper

What you do: 

Add all of the ingredients, basil first, to a blender. Blend until smooth, add extra water as necessary. Add salt and pepper to taste. Enjoy on your favourite summer vegetables.
